Garlic Herb Butter Buns
Pillowy little dinner buns get a glossy coat of garlicky butter loaded with parsley and chives the second they leave the oven, plus a sprinkle of sesame for crunch. Pull one open and the steam carries the garlic straight to you, which makes them a quick way to win over a holiday table.

Method
Step 1: Whisk the flour, sugar, yeast and salt in a large bowl. Add the milk, egg and softened butter and mix, then knead 8 minutes by hand or 5 in a mixer until soft, smooth and barely tacky.
Step 2: Cover the bowl and let the dough grow to twice its size, roughly an hour. Punch down, divide into 16 pieces of roughly 45 g and roll each into a tight ball.
Step 3: Space the balls 2 inches apart on a parchment-lined sheet, cover and proof until puffy and about 1 1/2 times their size, 35 to 40 minutes. Heat the oven to 375F.
Step 4: While they proof, melt 5 tbsp butter in a small pan over low heat, add the garlic and warm it 2 minutes without letting it color, just until it smells sweet rather than sharp. Take it off the heat and stir in the parsley, chives and a pinch of salt.
Step 5: Brush the buns lightly with a spoonful of the herb butter, leaving the herbs behind, and bake 17 to 20 minutes until golden brown on top and underneath, with centers at 190F.
Step 6: Immediately brush the hot buns generously with the rest of the herb butter so the green bits cling, then sprinkle with sesame seeds and flaky salt. Serve warm.
Kitchen note
Brushing the butter on while the buns are blazing hot lets the crust soak it up instead of leaving it sitting on top in a greasy film.
Easy swap
Stir 1/2 cup finely grated aged cheddar into the dough for cheesy garlic buns.
