A recipe box that outgrew the kitchen drawer
What started as a shoebox of stained index cards on a Venice, Florida counter is now a searchable library of 280 recipes, a small store and a team of cooks who still argue about how much garlic is too much.

Cooked twice, filed once
Every recipe on this site is cooked at least two times before it is published. The first cook writes the card. The second cook follows that card exactly, without asking questions, and marks every spot where they hesitated. Those notes become the kitchen note and the swap you see at the bottom of each method.
We cook on ordinary home equipment, shop at ordinary grocery stores and measure in the cups and spoons most people own. If a step needs a special tool, we say so up front.

Sisi writes every recipe on the site and keeps a row of potted basil, mint and rosemary on the test kitchen counter in Venice. She learned to cook beside her grandmother, still files each dish on a stained index card, and believes a good weeknight recipe should forgive a busy cook. Fresh herbs go into almost everything she makes.

Seb runs the test kitchen, where every recipe gets cooked at least twice before it is published. He spent years on restaurant grills before trading late nights for a home kitchen, and he still reaches for cast iron first. He handles the timing, the temperatures and most of the dishes, and he never skips resting the meat.

She reads every ingredient list with a pencil in hand, checks that the steps match the photos, and makes sure measurements read the same in cups and grams. Away from her desk she cooks big pots of vegetable couscous and trades pantry tips with readers.

Rohan shoots every dish in natural light by the test kitchen window, usually minutes after it comes off the stove. He likes honest crumbs, drips and a little mess on the board, because that is how food looks at home. When the shoot wraps, he is usually first in line for a slice of whatever pie was on set.
