Creamy Tuscan Salmon with Spinach

Chunks of golden-seared salmon settle into a garlicky parmesan cream sauce with softened cherry tomatoes and a heap of spinach that wilts in seconds. Everything happens in one big skillet in about half an hour. Serve it over pasta, polenta, or simply with a spoon.

Method

  1. Step 1: Pat the salmon very dry and season all over with salt and pepper.

  2. Step 2: Heat the oil in a 12-inch skillet over medium-high heat until it shimmers. Sear the salmon 2 to 3 minutes per side, until a golden crust forms; it should still be translucent in the middle. Move it to a plate.

  3. Step 3: Lower the heat to medium and add the butter and shallot. Cook 2 minutes, scraping up the browned bits, then add the garlic, oregano and pepper flakes for 30 seconds.

  4. Step 4: Add the tomatoes and cook 3 minutes, until their skins wrinkle and they start to release juice. Pour in the broth and simmer 2 minutes.

  5. Step 5: Stir in the cream and simmer gently, not at a hard boil, for 3 to 4 minutes, until it coats the back of a spoon. Whisk in the parmesan a little at a time.

  6. Step 6: Add the spinach by the handful, turning it until it wilts. Stir in the lemon juice and taste for salt.

  7. Step 7: Return the salmon and any juices to the pan, spoon sauce over the pieces, and simmer 3 to 4 minutes more, until the salmon is opaque and flakes easily. Serve straight from the skillet.

Kitchen note

Parmesan added to a sauce at a rolling boil clumps into strings, so keep the cream at a gentle bubble and add the cheese gradually for a smooth finish.

Easy swap

Use 1/3 cup chopped oil-packed sun-dried tomatoes in place of the cherry tomatoes for a deeper, sweeter sauce.
