Cheesy Pepperoni Pizza
A thick, focaccia-like crust fries in olive oil at the bottom of a cast-iron pan, so the base turns crunchy and golden while the interior stays fluffy. Method
Step 1: Whisk the warm water, sugar and yeast in a large bowl. Add the flour, salt and 2 tablespoons of the olive oil and mix until a sticky dough forms, then knead for 6 to 8 minutes until smooth and elastic.
Step 2: Cover and let rise in a warm spot until doubled, about 1 1/2 hours. Meanwhile, warm 1 tablespoon olive oil in a small saucepan, add the garlic for 30 seconds, then the crushed tomatoes, oregano and a pinch of salt. Simmer 15 minutes until thick, then cool.
Step 3: Pour 2 tablespoons olive oil into each of two 12-inch cast-iron skillets. Divide the dough in half, set one piece in each pan and turn to coat, then press toward the edges; if it springs back, wait 10 minutes and press again. Cover and let rise 45 minutes until puffy.
Step 4: Heat the oven to 475F with racks in the lower and middle positions. Dimple each dough gently with oiled fingertips, keeping a slight rim.
Step 5: Spread half the sauce over each crust, leaving a 1/2-inch border. Cover with the mozzarella right to the edges of the pan, sprinkle with Parmesan and arrange the pepperoni on top.
Step 6: Bake for 20 to 25 minutes, switching the pans between racks halfway, until the cheese is browned in spots, the pepperoni cups and crisps, and the underside is deep golden when you lift an edge with a spatula.
Step 7: Let the pizzas rest in the pans for 5 minutes, then slide them onto a cutting board and cut into wedges. The short rest sets the cheese just enough for clean slices that still stretch.
Kitchen note
Letting the cheese run all the way to the pan wall creates a lacy, caramelized frico ring where it meets the hot oiled iron, and that ring is the best bite of the pizza.
Easy swap
Bake the whole batch of dough in an oiled 13 by 18-inch sheet pan instead of skillets for a square-cut version, adding about 5 minutes to the bake.
