Stacked Cheeseburger Sliders
Little burgers built for grabbing: 2-ounce patties flattened on a griddle, a double square of American cheese, shredded lettuce and a tangy pink sauce tucked into soft brioche slider buns. They vanish at parties, and the recipe scales easily when the crowd turns out bigger than planned.

Method
Step 1: Stir together the mayonnaise, ketchup, relish, vinegar and onion powder. Let the sauce sit while you cook so the onion powder hydrates and the flavors blend.
Step 2: Roll the beef into 12 balls of about 2 ounces each and keep them chilled until the griddle is ready.
Step 3: Brush the cut sides of the slider buns with melted butter and toast on a griddle or large nonstick skillet over medium heat until golden, 1 to 2 minutes. Transfer to a tray.
Step 4: Turn the heat to medium-high. Add 4 to 6 beef balls, leaving room between them, and flatten each with a stiff spatula to about 3 inches across. Season the tops with salt and pepper.
Step 5: Cook until the undersides are well browned, about 2 minutes. Flip, top each patty with 2 overlapping squares of cheese and cook 1 to 2 minutes more, until the cheese melts and the beef reaches 160F. Repeat with the remaining balls.
Step 6: Spread sauce on both halves of each bun, add a small pinch of shredded lettuce to the bottom, then the cheesy patty and the top bun. Serve on a platter, stacked high if you like.
Kitchen note
Toasting the buns before cooking the beef leaves the griddle slicked with butter, which helps the small patties brown fast before they have a chance to dry out.
Easy swap
Make double-decker sliders by shaping 1-ounce patties and stacking two per bun with cheese melted between them.
