Green Smoothie with Clover Blossoms

Spinach, kale and avocado meet frozen pineapple and banana in a thick, olive-green smoothie that tastes far fruitier than it looks. Pink clover blossoms on top add a faint honey scent and a lot of charm. Blend it on a sunny morning when the garden, or the farmers market, is overflowing with greens.

Method

  1. Step 1: Pour the coconut water into the blender, pack in the spinach and kale, and blend on high for 30 seconds until you have a smooth, bright green liquid with no leaf pieces.

  2. Step 2: Add the avocado, pineapple, banana and lime juice to the green base.

  3. Step 3: Blend on high for another 40 to 50 seconds until thick and completely smooth; the color will deepen to an olive green as the yellow fruit mixes in.

  4. Step 4: If it is too stiff to move, add cold water 2 tablespoons at a time and blend briefly after each addition.

  5. Step 5: Pour into short glasses and let the smoothie settle for a moment so the surface flattens.

  6. Step 6: Pull a few petals loose from one blossom for scattering, then set the whole clover blossoms and green leaves on top just before serving.

Kitchen note

Liquefying the greens alone first means the frozen fruit only has to be blended once, so the smoothie stays cold and thick instead of warming up during a long, gritty second blend.

Easy swap

If you cannot find unsprayed clover, top the glasses with edible violas or a thin lime wheel instead.
