Frozen Lime Margarita

Blanco tequila, orange liqueur and a lot of fresh lime blended with crushed ice into a pale, spoonable slush that holds a snowy peak on top. It is sharp, cold and just sweet enough. Make a round when the patio thermometer reads ninety and nobody wants to cook yet.

Method

  1. Step 1: Put two margarita glasses in the freezer for 15 minutes so the slush does not melt on contact.

  2. Step 2: Pour the tequila, orange liqueur, lime juice, simple syrup and salt into the blender, then add the crushed ice on top.

  3. Step 3: Pulse 5 or 6 times to break up the ice, then blend on high for 20 to 30 seconds until the mixture moves in a slow vortex and looks like wet snow.

  4. Step 4: Taste a spoonful; if it is too tart add 1/4 oz more syrup, and if it is runny add a handful of ice and pulse again.

  5. Step 5: Spoon into the chilled glasses, mounding a small peak of slush or a little extra crushed ice on top.

  6. Step 6: Cut a slit in each lime wheel, slide it onto the rim and serve with short straws or spoons.

Kitchen note

Sugar and alcohol both lower the freezing point, so the syrup and liqueur are what keep the texture soft and scoopable instead of turning into a rigid block of flavored ice.

Easy swap

For a virgin slush, replace the tequila and orange liqueur with 3 oz fresh orange juice and 1 oz extra lime juice, and cut the ice to 2 1/2 cups.
