Grilled Ham and Carrot Wrap

Sliced ham, sweet shredded carrot, cheddar and crisp lettuce roll up in a flour tortilla spread with honey-mustard cream cheese, then get pressed in a hot grill pan until striped and just melty. It packs well for lunch, takes about 25 minutes start to finish and wins over picky eaters.

Method

  1. Step 1: Stir the softened cream cheese, Dijon mustard and honey together until smooth. Toss the shredded carrots with the cider vinegar and a few grinds of black pepper.

  2. Step 2: Warm the tortillas for 10 seconds each in a dry skillet or the microwave so they roll without tearing. Lay them flat and spread each with a thin layer of the mustard cream cheese, leaving a 1-inch border.

  3. Step 3: Across the lower third of each tortilla, layer the ham, then the cheddar, carrots and lettuce. Keeping the fillings in a compact strip makes a much tighter roll.

  4. Step 4: Fold the sides in over the filling, then roll up snugly from the bottom edge. Brush the outsides lightly with olive oil.

  5. Step 5: Heat a ridged grill pan over medium heat for 3 minutes. Grill the wraps seam side down first, pressing with a heavy pan, until well marked and sealed, about 2 minutes. Turn and grill another 2 minutes.

  6. Step 6: Let the wraps rest for 1 minute so the cheese sets slightly, then cut each in half on a sharp diagonal and serve.

Kitchen note

Starting seam side down lets the melting cheese glue the edge shut, so the wrap stays closed when you turn it and when you slice it.

Easy swap

Replace the ham with sliced roast turkey and the cheddar with pepper jack for a wrap with a little more kick.
