Fried Egg and Salami Sandwich Rolls with Fries
A soft roll holds a fried egg, cheese melted straight onto thick coins of seared salami and a stripe of spicy brown mustard. Crisp-edged, garlicky steak fries roast in the oven while the skillet does its work. Think diner breakfast crossed with a deli lunch, ideal for a lazy weekend.

Method
Step 1: Heat the oven to 450F. Cut the potatoes into thick 1/2-inch batons, toss with the olive oil, smoked paprika, garlic powder, 1 teaspoon salt and some pepper, and spread on a rimmed baking sheet with space between pieces.
Step 2: Roast for 35 to 40 minutes, turning once after 20 minutes, until deep golden outside and creamy within.
Step 3: About 10 minutes before the fries are done, cut 3 small notches around the edge of each salami slice so it stays flat as it cooks.
Step 4: Melt half the butter in a large skillet over medium heat. Fry the salami for 2 minutes until the edges brown, flip, and overlap the slices into 2 stacks with a slice of provolone on each. Cover for 1 minute to melt, then move to a plate.
Step 5: Add the remaining butter to the skillet and crack in the eggs. Cook until the whites are set and the yolks are as done as you like, 2 to 4 minutes; flip them for over-medium if you want less drip.
Step 6: Split the rolls, toast them cut side down in the salami drippings for 30 seconds and spread with mustard. Fill each with a cheesy salami stack and an egg, and serve with the hot fries.
Kitchen note
Notching the salami edges cuts through the outer ring, which shrinks faster than the center and makes each slice cup upward; flat slices brown evenly and stack neatly.
Easy swap
Thick-sliced bologna or mortadella fries up the same way and makes a softer, milder sandwich.
